In July 2018 Michael returned to the James Beard House to cook Sicily against Greece, course by course, with Greek chef George Kyrtatas.

The menu

The foundation billed it as a regional, seasonal cook-off between the two kitchens. Hors d'oeuvre included Piedmontese beef carpaccio, and clams with charred leeks and coppa. Dinner went from sea urchin with passion fruit to langoustine with caviar, grilled octopus with fava beans and a pistachio and caraway crusted sirloin, and ended with lemon cheesecake beside a custard-filled phyllo.
